The Quorum - Fine Dining Experience
The Quorum offers Wellington's most considered tasting menu - a five-course progression built entirely from produce sourced within a ninety-minute radius of the property, interpreted through technique that respects its origins without freezing them in nostalgia. It is designed for guests who regard a long dinner as the centrepiece of an evening rather than a precursor to one, and for whom the story behind a dish matters as much as its execution. Reservations are limited to thirty-two covers per service to ensure that the kitchen's attention is never diluted.
Seasonal Five-Course Tasting Menu
Chef Ngata rebuilds the menu each month around whatever the Wellington farmers' market presents, meaning the dish you remember from a previous visit will never appear in identical form again.
Producer Storytelling at the Table
Each course arrives with a brief written provenance card identifying the farm, fisher, or forager responsible - a practice that transforms the meal into an edible map of the Wellington region.
Private Chef's Table for Six
A counter within the kitchen accommodates up to six guests who dine facing the open pass, with Chef Ngata narrating each course as it is finished - an arrangement available exclusively by advance request.
Heritage Room Design
The dining room occupies the building's restored Edwardian banking chamber, its original plasterwork, dark rimu panelling, and antique mirrors preserved so that the architecture itself becomes part of the meal.
Bespoke Celebration Menus
For milestone occasions, Chef Ngata corresponds directly with guests in advance to incorporate personal dietary histories, cultural preferences, or specific memories into a menu built around the individual rather than the season.
Post-Dinner Cartographer's Study Access
Parties of up to eighteen who dine at The Quorum may arrange exclusive after-dinner access to the Cartographer's Study, where original Wellington survey maps line the walls and the evening extends at its own unhurried pace.
